Quick Fix Dinner: Lasagna Roll-Ups

Happy Wednesday! I hope your week is going well and if it's not...you're half way done! WHOO HOO!

I hate to make people jealous, but I'm on break and loving every minute of it! I know, you want to shoot all the teachers out there right now, but walk a mile in our uncomfortable high heel shoes and you'll be begging for a summer vacation, too! Am I right Fellow Teachers?

I've been getting a lot done in the house:
-laundry up the wahzoo...done.
-organize closet monster...killed it
-read to my hearts content...Bang-a-rang Peter!
-train for my next race... Hellz to the Yeeah
-sleep up a storm... get that umbrella ella ella A
Ahhhh! Feels nice.
**To all my friends close by, I do house calls for dinner. Hard day at work? Request a meal and I'll bring it to ya! :) Serious!**

Turns out that when you're on break, your lazy bone starts to grow a little bit. Instead of making complicated meals, I find myself making the easier kind...but still just as equally delicious. I have a month of break left so I still have time for some challenges.

Until then, I give you a dinner so easy and fun to make, that even a teacher who is on break and whose lazy bone prevents her from showering sometimes, can make, half awake from a 7 hour nap.

Project Wifey Wife Week #18-
Spinach Ricotta Roll Ups

-pack of frozen spinach, thawed
-16 oz tub of part skim Ricotta Cheese
-1/2 Tbs of garlic salt
-pepper to taste
-your favorite pasta sauce
-10-12 lasagna noodles, cooked
-2-3 cups of Swiss cheese; shredded
-1 cup of breadcrumbs
-drizzle of olive oil

I used my FAVORITE German Bolognese mix that my Auntie Irene brought from Germany. Even though I was born in Germany and lived there most of my childhood, I do not speak a lick of it.
Thank God for pictures!
Moving right along.....
So organized and beautiful, no?
Now I got-stah get my butt up and make dinner! Do you think I need to take a shower before Hubby gets home from work? I mean we're married now so he can't really leave me. Ok, I'll shower.

  • What's the easiest dinner you can make? Link it to me!
  • If you were on break, how would you spend your lazy days?

  1. Now you have had one good week! Can't wait to try the recipe. Looks delish.

  2. You are my hero, this look's amazing.

  3. That is so similar to one I posted not too long ago: http://rebekahrose.blogspot.com/2011/06/lasagna-alfredo-roll-ups.html Lasagna Rolls are SO fun to make and yummy!! I love all the variations you can find out there. :) Being on break is a wonderful thing, and yes, just a tad jealous. :D Probably the easiest dinner we make sometimes is about 2 cups cooked macaroni noodles, a pound of cooked and s&p seasoned ground beef, a can of diced tomatoes and about 2 cups of cheddar cheese mixed together, topped with another sprinkling of cheese and baked. VERY simplistic meal, but one of hubby's favorites and tasty!

  4. This sounds SO good! I've never made roll-ups of any kind but it's definitely something I want to try :)

I love making easy dinners so I feel like 75% of the dinners I make are easy! I love grilling chicken for chicken fajitas or throwing together an easy taco salad. Here is a link for a really easy crockpot pork loin my husband LOVES: http://sherrilynnpuz.blogspot.com/2011/04/lessons-in-kitchen.html

  5. Yummy! I know my husband would love these!

I love being so productive in the summer :) Definitely a benefit of being on a traditional school calendar. I'm slowly but surely tackling laundry, still scared of the closet monster, and reading & training like crazy! How I would adore the extra money of a summer job, it feels well deserved for a break after all the hell of the school year!

  6. lol you just made me laugh out loud, "he cant really leave me" and those look deliciouss.

  7. This is going on the menu. It looks so good. And I don't usually even like lasagna.

  8. I LOVE lasagna rollups! thanks for reminding me!
What's your project wifey wife? I might need to do that!

  9. Thank you for bringing bang-a-rang back in to my life!
And I would not classify that dish as lazy. It looks delicious. Lazy is when I put a package of Velveeta cheesy shells mixed with a can of chili on my honey's plate and call it "dinner" lol.

  10. Oh, man, this dish looks sooooo good!

Easiest dinner I can make is fried chicken, one of my favorite dishes. Because my mom craved fried chicken, especially KFC, while she was pregnant with me, they think that's why I love it so much.

I like spending my lazy days searching for new music or watching a life-changing documentary. :)

I want to know what you think...no really I do! Leave a comment, question, or just a hello. It'll make me SMILE!
