Lemon Blueberry Scones

I've never had as many scones as I have had in the past couple of months days. Scones are like Muffin's crazy cousin that no one really pays attention to. But, I paid attention Scones... and I want to marry you. Some say you aren't sweet enough, but I say you are perfect for breakfast. Any sweeter and I might as well take shots of Splenda. Some say you are hard (core), but I say, the person who made you didn't do it right. I know you are a big fluffy bear of goodness. ::hugs::

Thanks to this ridiculously easy recipe, I am able to switch the fruits and create some magical recipes of my own. I tell you, these scones are easier and FASTER than any boxed cake. Move over Betty, Joanna's come to town.... BOOYA!

Lemon Blueberry Scones

Ingredients:
1 cup of fresh blueberries
1/2 Tbs of freshly grated lemon peel
1/2 Tbs of lemon juice
3 Tbs of Vanilla Sugar
2 cups all purpose flour
2 tsp of baking powder
1/4 tsp of salt
6 Tbs of butter; cubed and slightly softened
2/3 cups of buttermilk

I am a BIG scone fan... but I do love me some muffins too - don't make me decide!! :D I discovered a fantastic scone recipe on allrecipes.com years ago and never looked back - I'd make them every weekend if the boys wouldn't get sick of them. I remember "falling in love" with them at the fair - fair scones all soft and warm and smothered in jam... YUMMMMM!

    I might have to try your tilapia recipe--we just moved from Asia and we ate a lot of Filipino food as well, so hubs would be on board for the rice/tomato side. I'm going to look for recipes!
