A Turkey Burger fit for the gods

Well hello there you! Happy Hump Day!! I hope your day was as awesome as mine!

I have to say that I entered the day with my Resolutions in mind and did a pretty good job! I stayed present  in everything I did today, I ate healthy, I ran harder and longer than ever (so did T!), made a recipe for project wifey wife,  had an amazing chat over dinner with my Hubs, and I still have time to watch TV read a book. God is good and today was awesome.

Project Wifey Wife Week 5- The savory:

I love free recipes, don't you? Ralph's (the grocery store) has become my friend lately. He's just full of all kinds of things that make me smile, plus he's ALWAYS there when I need him. If I could wrap my scrawny arms around him, I'd give him a great big hug! The only complaint is that he's a damn gold digger... I can't tell you how much I spend on this fool.

Anyway, despite my love and hate relationship with the dude, I was elated to see a carousel of FREE recipe cards smack dab in the middle of the meat section. Could it be? FREE food secrets? Let's just say I left the store with a stack big enough to play a full game of Go Fish!

Today, I attempted the Grilled Greek Turkey Burger.

Since it's butt cold outside, I had to dust off an old college homie... Mr. George Foreman... Hello again!

Oh, the fun times we once had in college. ::tear::

He welcomed me with open grill arms and even warmed my (pita) buns... ::cue joke drum tune:: duh- duhn- Chhh

While my "buns" got all toasty, I gathered my ingredients and got to work!

Ingredients:
1 lb. ground turkey breast
1/4 cup of onion, finely chopped
2 Garlic cloves, minced
2 tbs of finely chopped parsley
1/2 cup breadcrumbs ( I used Italian breadcrumbs because that's what I had)
6 oz. Greek yogurt
1/4 cup feta cheese crumbled ( I used spreadable because it was on sale)
1 tbsp fresh lemon juice
1/2 tsp dried oregano
4 large pita halves

I had some drama with the onions. Do you have any tips on how to ease the pain of cutting onions? Holy Moly... I was crying like a child.

THIS....

Led to THIS...

If I could make an onion cry, I would!!!

1. Start by combining the turkey, onion, garlic, parsley, and breadcrumbs with your hands. Season with salt and pepper to taste. Form into 4 patties and drizzle with olive oil.

2. Grill on each side for about 7-8 minutes (10-15 ish if you're using your Foreman)

Another blogger asked what little things make you smile... grill marks are one of mine.

3. While those are grilling, combine the yogurt, feta, lemon juice, and oregano in a small bowl. Salt a pepper to taste.

Oregano? Orega-YES!

4. Slather yogurt spread inside the pita buns. Make a little nest with lettuce and cucumber if you'd like and slide in the burger, ever so slightly.

5. Serve with Hummus and pita chips and dig...right...in.

Hum-ah-na Hum-ah-na Hummus.... SOOOOOO GOOOD!

While all this was going on, Sonic prayed to the counter gods to let just one morsel of food drop.

The verdict on these Greek Burgers? Two thumbs up! It has a Gyro flavor goin' on...me likey!

Yes, Hubs and I use one cup. Why? Because that's what my mom and dad do and I think it's sweet. Sure we're sharing germs, but it's sweet... what's mine is his and what's his is mine. One rule though, if you take the last gulp, you have to fill it up.... or whine loud enough for him to get it. ;)

Dessert was courtesy of T! She made sprinkle blondie cupcakes. If you could taste clouds, I think this is what they'd taste like! YUM! Thanks T!

What is your best tip to prevent crying while cutting onions? Any other cool kitchen/cooking tips you love?

  1. Never tried it, but I heard you could place the onion in the freezer for a bit before cutting into it. :)

    3 tips for onion cutting:
    1. use a really sharp knife...it shouldn't release the onion's toxins that irritate your eyes.

    2. turn your stove on...it should burn off the sulfuric acid in the air that burns your eyes.

    3. my solution: use swimming goggles!!! silly but works!

great job and happy cooking mrs. vasquez!
