Why didn't I think of that?

Happy Friday everyone! I CANNOT tell you how elated I am that it is the end of the week. Coffee can only do so much in keeping a person sane! And...ummm... I get 3 whole days? It must be my birthday!! (it really isn't, it just feels that good!)

So yesterday Hubs and I had a double date dinner party with Kuya and his girlfriend Katrina...or as Sebby calls her, Katwina. She's all kinds of nice! I really like her!! She even helped me prepare dinner.

I had some difficulties.

My night started with preparing dessert. I wanted to try a recipe that was of something simple, yet foodgasmic....this was it.

Bunuelos, Elephant Ears, fried dough with cinna-sugar, heaven...whatever it's proper name is... I want to name my first born that. Coochee cooo baby Elephant Ears....ee... I better knock on wood.

The recipe is simple... to those who can read good. (mistake intended) I made TWO, count em, TWO cooking mistakes.

Project Wifey Wife Week 6-The sweet- Bunuelos

3 cups flour, sifted twice
1 Tbsp salt
1 Tbsp sugar
1 Tbsp of Baking powder
2 eggs
3/4 cup of milk
1/2 butter

Step UNO:
Mix flour, baking powder, salt, and sugar.

So this is the part where I accidentally added the butter. Why? Because I read it wrong... There goes unused ingredients into the trash...whoomp whooomp

Step DOS:

In a separate bowl mix 2 eggs, sugar, and butter. Stir in milk.

This is where I made mistake two. I have no portion sense and added WAAAAY too much milk. I fixed it with flour. LOTS of flour.

Step TRES:

Add wet mixture into dry mixture and knead until smooth. Roll into 20-25 balls.

Let stand for at least 30 minutes. Roll flat and fry. Sprinkle with Cinnamon-sugar immediately!

It only takes a few seconds. Make sure you flip em!

It took two ladies to flip these bad boys.


Sprinkle, eat, serve with Dulce De Leche Ice Cream. I like the tiny ones because everyone gets the same amount! And a cute spoon! And no dishes!

Project Wifey Wife Week 6-The Savory- Ms. T's Chicken Tortilla Soup

My buddy T adapted a few recipes she found and blessed me with th wonderfulness that is this soup recipe!

1/3 cup chopped onion
1/2 green and red bell peppers chopped
1 (4 ounce) can of green chiles
4 cups chicken broth (I used chicken bullioun)
1-2 cups shredded, cooked chicken (we both used store bought rotessiere)
can of black beans (I added this)
salt to taste
1/2 packet of taco seasoning mix
1 (10 ounce can of tomatoes and green chiles)
1 Tbsp of lime juice

Fry the oinon in a large saucespan with about 2 tsp of oil.  Add chiles, broth, chicken, salt, beans, tomatoes and chiles and, taco seasoning. Simmer for 20 minutes. Squeeze lime.

It helps to have some help! Kuya shredded...we wont mention the bones he left in.

Katwina cut the veggies. She did not leave any bones.

Hubs did a "grate" job with the cheese.

I left the job of tasting to me... I didn't want them to burn themselves.

I also made mock Chipotle white rice in my rice cooker.

And black bean, chicken, corn, and cheese burritos.

Katwina wanted some soup with her cilantro.

Boys had fuzzy navels and girls had Stellas.... or was it the other way around?

The boys LOVED dinner.... and even ate what the girls couldn't finish.

We had a splendid time.

We exchanged late Christmas Presents with Katwina and watched Social Network.... all I can say about that movie is... billionaire!!!! Pretty good!! I want to be friends with Mark!

  3. I remember you explaining to me what bunuelos are and I didn't know if I had ever tried them. "Elephant ears" rang a bell - they're a big hit in Washington's Puyallup Fair!

  4. mmm, bunuelos sound delicious! i bet i've even had them before, either in mexico or argentina. will definitely be giving these a try. the chicken tortilla soup looks awesome, too!
