My Uncle Norman is a lucky guy. He's been able to travel to many different countries, learn a ton of new languages, and eat such wonderful exotic foods! He works for the US Embassy and many years ago, he was stationed in good ol' Italy! He met a lady there and she blessed him with my all time favorite pasta dish.
Salami Pasta
Unless they somehow make a pasta made of French Fries, I think this will remain at the top of my list... next to Mizithra with browned butter.
Without further a-do... let's get it started. Give it a try friends. You'll be loving me forever!
Ingredients
4 cloves of garlic
1/2 of a medium yellow onion
6 Tbs of Extra Virgin Olive Oil
1 cup of chopped Salami
4-6 ripe tomatoes
pinch of Oregano
salt and pepper to taste
handful of spinach (I added that to the mix)
fresh basil for garnish (optional)
Step UNO: Heat the oil in a large frying pan on a Medium flame and add the garlic. **Do not burn the garlic or your pasta will taste bitter!
Here, you are essentially flavoring the oil. Add a sprinkle of Oregano.
Step DUE:
Add your chopped salami and fry until brown.
Step TRE:
Add your chopped onion ( I didn't cry this time!)
Step QUATTRO:
Add the tomatoes! Tomato Tip: For this particular sauce, I emptied the seeds and goop. It makes it less watery!
JUICY!!
Don't be shy Tomats... mingle!
Step CINQUE:
Add some spinach...for that added health kick.
Step SEI:
Toss in the Noo-Noos

We finished dinner with some Homemade Almond Roca Vanilla Ice Cream that Ms. Irish and I made for New Years! Holy Cavities it was good!
Hubs was kind enough to eat it with me while watching Eclipse because I've never seen it before and it was playing for FREE on Showtime!
Don't get me wrong, I'm team Edward, but Jacob totally got jipped!

I am Italian so I'm predisposed to ALL pasta! :) I especially love my mom's tomato sauce with meatballs and sausage - nothing better :)
