Hello World!

Good evening! I hope you are all enjoying your Saturday! So many possibilities for this non-work day. But, the Hubs and I decided not to pack it with plans for once. Ok, ok, we were just lazy. It's been a tough week! Don't judge!

I DID clean the kitchen though. Three cheers for clean kitchens!

Isn't she a Beaut? I love how the counter tops glisten!

After a full morning of cleaning, our energies plummeted and we decided to have some tea on the couch. It was nice because we didn't have the TV on for once. We just enjoyed each other's company and our cups of tea. I'm giddy because I got to use a wedding gift! Say hello to Mrs. Tea Kettle. I hope she comes to life like in Beauty and The Beast. I think we are going to be good friends, Mrs. Kettle.

Our Tazo tea was Deee-lish. I was also able to enjoy the other piece of my left over snicker doodle from Boarders. Holy Moly it was music to my lips!

Hubs, being the cookie conesuir and all, wanted to have a nibble so he can figure out the recipe, Monica style. However, I didn't play into his trickeries and finished it myself. hehe

The other night, I made the most GLORIOUS pork chops imaginable! I had to share it! My inspiration was from Jessica Seinfeld's cookbook Deceptively Delicious. Instead of chicken strips, which she uses, I used pork chops. The trick is  to add broccoli puree to my egg wash. That makes the pork chops sooo good and incredibly moist. Double Whammy!

Check out the Conga line!

The recipe is simple.

Breaded Pork chops (with Broccoli Puree)
 6 boneless pork chops
1 cup of flour
2 egg whites
1 cup of broccoli puree
2 cups of Italian breadcrumbs
2 tbs of olive oil for frying
salt and pepper for taste

1. Start by pureeing about 2-3 cups of steamed broccoli florets. I used my Magic Bullet for this one!
2. Carefully mix the cooled mixture into the egg whites.
3. Start the Conga line! Coat the pork chops in the flour (for sticking power), dip it in the broccoli mixture, pat on the breadcrumbs.

4. Fry in olive oil. About 5 minutes per side.
5. Add some sides and ENJOY!

I added some roasted Brussel Sprouts and my white and brown rice mixture. This was actually my FIRST time eating Brussel Sprouts because I grew up with a mother who hated them with a passion. I thought I'd give it a go because I always see it on blogs. I liked them. Broccoli is to trees as Brussel Sprouts are to bushes... or something like that.

Tonight, Hubs and I are getting off our arses and heading out to dinner. I hope I can resist the bad stuff and make some healthy choices. ::crosses fingers:: Until next time!

What are your Saturday night plans?

  1. Feels so good when the kitchen is clean - like all is right in the world... Well - maybe that's a little extreme, but you know what I mean: )
