Ridiculously Easy Crockpot Pulled Pork

As if crock pot cooking couldn't get any easier, I find this ridiculous recipe. I found it in the allrecipes mini magazine that came with an issue of Good Housekeeping (why does this magazine making me feel old?).

This recipe is perfect in every way. It's simple, quick, and delicious. Actually, simple is an overstatement. What's 5 notches below simple? I know. This recipe.

Ingredients:
2 lbs pork loin (didn't know it shredded!)
1 can of root beer
1 bottle of your favorite sauce

Seriously, that's it.

1. Combine loin and root beer in crockpot.
2. Set it (low) and forget it! BING! Leave it for about 6-8 hours.
3. Drain and mix with sauce.

Seriously, that's it.

I also used steamed cauliflower to make mock mashed potatoes. (Because fried potatoes are out of the question) Insane.

You're welcome.

Weekend Recap: Meeting a Burger I Did Not Like

Well Happy Monday to ya! I think most everyone I know seems to be happy that this week is a short week. Thanksgiving HERE WE COME! But guys, I take that happy cake.... my fellow teachers and I are off for the whole week....I know I know, we are lucky sons of you know whats. I am loving every minute of it!

This weekend was full of new happenings. First up, I got a new do'. It was about time, too. I was starting to look a little crazy lady there. After I snapped this picture, I was so embarrassed with myself. Talk about letting myself go in the scalp! I haven't had a haircut in over a year!
Good job, Joanna for FINALLY getting a haircut...it's boring...but it'll do.
Moving on....

After playing with my hair for most of the day (so soft) hubs and I went on a double date with my Kuya and Katrina. We went to one of my favorite burger joints!
Their burgers are a step up from fast food burgers, but a step down from gourmet burgers. I love their meat and buns. Rawr!

I also appreciate their amazing condiment and produce station! Build it and they will come.
Tell me that these stations aren't awesome opossum!
I opted for the Swiss and mushroom burger and it was nummy for my tummy.

Hubs went with a regular bacon cheeseburger and wanted to show off the salt and pepper shakers apparently. He's odd sometimes.
Kuya and Katrina were more daring and got different kinds of meats. I was surprised to see Katrina got an Elk Burger! That's surprising because 99.9% of her meals have only chicken. She's what we'd call a picky eater. But, luckily she's not those picky eaters that I hate...she actually tries things that we offer her no matter how weird they are. Kudos, Katrina! (My Kuya can be very odd. too. Him and Hubs get along just fine.)
I'm the type that would try everything once and I bravely tried the Elk Burger. I immediately spit it out. WHAT? I spit out a burger? I must be out of my mind!! But, I just couldn't stand the gamy taste. ::shivers:: This might go on my list... you know, my food foes list.

After our trip to burger town, we decided to go to what I like to call, Grown-up Chuck E. Cheese!
Dave and Busters is a place where adults can drink their fancy cocktails, eat their fancy chicken strips, and play their fancy race car games. It's a dream, really.
We danced...like idiots.
We played trivia...like idiots. (Nothing makes your feel worse than not knowing trivial facts that everyone in the world seems to know.)
And then, I found my new favorite game!! FRUIT NINJA! HIYA!
I spent about $10 $20 playing this bad boy! It's super addicting. I mean....it has food AND I'm a ninja for the day! It's a filipino foodie's dream game!

And the best part about Dave and Busters is that you get TICKETS for real prizes! Hubs and I had enough for a blender...no lie.... but we decided to hold out for something better. I have my eye on one of those Chinese thumb trap thingys.

It was a fantabulous weekend! But the thing that made it better was knowing that I don't have work for a whole week! HIYA!!!

Ashamed and McRibbed

I have a confession to make.

I am a McRib fanatic. I'm one of those crazy freakazoids that get excited about the McRib's return to our country. I'm the one that yells "The McRib is Back" as I drive by every McDonald's I see. I drool at the mere thought of the rib meat dripping with tangy bbq sauce...or whatever it really is.

Is it weird that the sandwich is made up of God knows what? Is it weird that this meat is so processed that I can't think of a joke to couple with that idea? Yes, but the cholesterol induced coma (or is that a heart attack?) I get when I eat it wont let me think straight. It's just so good when it touches my lips.

And bonus, Hubs is equally obsessed. We are a McRib family til the end. And I pray that the McRib will be kind to our arteries so our end will not come sooner than what's in God's DayRunner Agenda.

My second confession is that I've already had Two McRibs this McRib season and yes, it's only been two weeks. That's two heart attacks in two weeks.... I must have nine McRib lives.
I can't help it guys. I probably need help but get the hell away from me and don't touch my sandwich!! I have been taking major leaps....nay... astronaut bounds to make my body healthy and strong. I even ran twice this week and did 90 minutes of yoga yesterday...doesn't that cancel ANYTHING out? I wasn to believe so.

I'm making all the health food bloggers cringe writing about this I'm sure, but the truth is, this sandwich reminds me of my childhood. This is a memorabilia from the times in Germany when my parents would take us to McDonalds and where this delicious sandwich was a constant on the menu. So, I hold on dearly to the times when they come back because.... who knows if I will ever return to Germany? That's what I'd like to know. This sandwhich is my childhood friend.
Welcome back, friend. Welcome back.

  • Any fans out there? Haters?

Eureka! Weekend Recap.

I went to my high school reunion this weekend. It wasn't what I thought it would be, maybe because I had Romy and Michelle in my head on the way there.
Unfortunately, my expectations of seeing that weirdo from my class who is now a Multi-Millionaire, or seeing the former Ms. Popular now sporting kankles, was not met at all. I think this was partly due to the fact that only 30 out of the 400 students from my class actually showed. Talk about school spirit.
I still showed my school spirit! And I wore an embarrassing picture of my High School self. I haven't changed a bit, except my acne has finally subsided. THANK GOD!

But, I was still in good company and made the most out of it. I DID get to see some of my friends and that made up for it all. Oh and yes, there was a montage of pictures from good ol' 2001. I feel old because I don't remember taking any of those pictures. Here's another Mall Shot.
If you tell, I'm the dark shadow behind the white girl. See my teeth glistening in the light? My friend, Nicole and I had a good laugh at this one. Fast forward 10 years and my skin magically lightened.
It was so nice to catch up with old friends....

My cooking buddy Nolan! We were in Foods class together!

The Beautiful Bride to Be Crysal! So exciting!
I loved introducing everyone to my wonderful Hubby. So proud to flaunt this cutie pie!
On Sunday, my Kuya's friends from Washington came down. We had so much fun wine tasting...

San Antonio Winery

Taking this crazy Kookoo to the nearby "farm."
Watching him play in the water spouts....

The face of pure joy
And finally...Eureka!...burgers.

This place is truly LEGIT! The meat, the bread, the beer, the fries....all AMAZING!
Such a wonderful weekend of good food and friends! Love it when that happens!
