Take Me to the Greek...Salmon

See what I did there on that shnazzy title?

When Hubby comes home and says that the house is filled with all his favorite food smells, you know you're doing something right. When your house STILL smells like that two days later...ummm, I'm not quite sure what that means. ::scratches head::

Point is, I made something that smells amazing and tastes even MORE so. I am pretty excited to post this because I created this recipe using my own noggin. Pretty impressive if I do say so myself. Sorry to toot my own horn, I'm just happy that my noggin is working. YAY for New Year's Resolutions.
Project Wifey Wife: The Savory
Panko Hummus Crusted Salmon with Orzo Salad

Ingredients:
For the Salmon
12-16oz  salmon or any other fish
2-3 garlic cloves; minced
1/4 of a yellow union; diced
1 Tbs of dried parsley
1 Tbs of dried oregano
1 cup of panko breadcrumbs
2Tbs of Hummus (I used a generic store bought one with no added flavors)
salt to taste
olive oil to moisten
feta for pretty decor

For the Orzo Salad
1 1/2 cups of dried orzo pasta
1 zucchini; chopped
1 yellow and 1 red bell pepper
1/4 yellow or red onion
1/2 Tbs parsley
1/2 Tbs oregano
Drizzle of olive oil
salt to taste

1.Preheat the oven to 400 degrees and Boil the orzo pasta according to the directions on the box.
2. Saute the onions and garlic for the salmon in a small pan. Add the oregano and parsley and stir. Cook for 2-3 minutes until onions are translucent.

3. Meanwhile, in a bowl, mix the panko breadcrumbs, hummus, salt, and oil together. Add the onion mixture and stir together. It should hold together pretty well.

4. Spread the mixture ontop of the salmon and crumble some feta on top if you'd like. I did it and turns out, I don't like feta.

5. On the same baking dish, throw on those yummy veggies for the orzo pasta. Toss with olive oil, oregano, parsley, and salt.
6. Bake  for 20-25 minutes until Salmon is flaky and the veggies are roasted. Mine cooked together perfectly.
7. Mix the beautifully fragrant veggies into the orzo pasta.


8. De....wait for it....vour.

In other news....
I've actually been to The Greek Amphitheater for a Lykke Li concert. It's pretty phat.

You know what else is pretty bangarang? The Coachella Line up. Wahoooo! I can't wait! Remember all the fun I had last year? It's going to be epic, my friends.

I am most excited to see Florence + The Machine, Radiohead, Bon Iver, The Shins, DJ Shadow, Santigold, The Rapture, Snoopaloop and Dr. Dre...oh my... I guess I could just show you the poster because there are so many more.

I want to start by saying that you are more than welcome to use chicken for this recipe. I realize that there are many people out there, most of which are in my Google circle of friends (I still don't get Google +) do not like fish. I don't understand this blanket of a statement. I mean, there are so many types of fish out there. I really can't see how you can dislike all fish. Wouldn't you say that's a little racist? Animalist? Fishist? Do I have to even say it? There are many fish in the sea. And in the ocean for that matter. So, in conclusion, I ask that if you are a fish hater, give another type of fish a chance before you go around hatin' on all fish. And that was your PSA on Fish lovin'.

Ok, ok, I keed. I understand a hate for a particular food... remember all the foods I can't stand? ::shivers:: If someone tried to feed me something on my list, I'd SOOOOO unfriend them off of my Facebook.

Week #20
Tortilla Chip-Crusted Fish with Creamy Salsa & Cilantro
adapted from Bride and Groom First and Forever Cookbook. Awwww.

Ingredients
2 white fish fillets (Halibut, Tilapia, or any other white fish)
Salt
1/2 Tbs ground cumin
2 Tbs melted unsalted butter
1 Tbs fresh lime juice (I put  loads more. I love my citrus!)
2 handfuls of tortilla chips (hint of lime flavor FTW!)
3/4 cup medium salsa
3 Tbs sour cream
2 Tbs fresh chopped cilantro

Remember when my hubby brought home a freggin' XL satchel full of fish? I had the pleasure of gouging my fingers trying to fillet them all. I just had to point that out again. Point is, I have no idea what these fish are called. I don't know if they're halibut or some exotic fish that we just poisoned ourselves with.
Dear Phil,
I am so very sorry for doing what I did to you. You are such an honorable creature that put its life on the line for my selfish food dreams. I hope you can forgive me one day.

After hours upon hours of poking and snipping plus 5 band-aids later, I finally "filleted" it.
Cover with foil and bake for 20 minutes. Uncover and cook for 10 more minutes.
In the meanwhile,

Top with the salsa mixture and cilantro, and put those fillets atop some yummy cilantro rice. This really was a great and refreshing dish! And for all you fish haters out there...give it a try. If you don't like it, give it to me, no questions asked. I'll take care of it...and take care of you, friend.

Daddy's Day Recap

Top Five Reasons why I love my Daddy!
1. He is my hero. He is a retired Warrant Officer WHOOP WHOOP! His hard work and sacrifice through the years allowed us to travel the world, live comfortably while saving for our future, and it allowed my brother and I  to attend college for FREE! He taught me to be a hard worker with amazing work ethic.

2. He is NICE. One of the things my brother and I love about my dad is that he can get along with ANYONE. If you leave him on a bench at the mall, he will have made friends with anyone around him. My brother and I have the confidence to small talk to anyone because of this.

3. He can fix anything! I have high expectations for my Hubby. Growing up, my dad was able to fix anything from my broken toy to the family car. He is MAGIC!

4. He plays golf better than Tiger Woods! And that's a FACT!

5. He is strong! About 3 years ago, my dad had to undergo surgery.  That night after his surgery, he wanted out of that hospital. The doctors couldn't believe how strong he was because he literally forced himself out of bed to walk around. By the next day, he was walking and proved to all of us that his mind is stronger than his body. Thankfully, he is all better now.

This weekend was food filled fun. I guess that's not so different from my other weekends, but we did celebrate my daddy, so that's different. The Kuya and I planned a fabulous Lunch for our Favorite Dad!
Katwina made my dad's favorite salad dressing from Olive Garden, my Kuya made his favorite dessert which is Banana Bread, and I made this.
Came out DELISH! My dad is a hard person to please when it comes to food. I think he really liked this meal!

 I think Sebby even liked it.

If you're wondering where my Hubby is, he was out fishing with his dad. They went on an overnight fishing trip out at sea. I was worried that he would be caught in a storm or something, but he was A-OKay! I never knew this, but my Hubby is the best fisherman. He caught 15 FISH! HOLY NEMO!

He's so sweet, he brought home the fish-bacon and knew that I would make something amazing.

The only thing that I HATE about him being a great fisherman, is that I had to scale these bad boys. These fish are EVIL!!! I pierced myself 5 times with their scaly and sharp weaponry! My mom was gifted some fish, too and had to work these monsters. I feel your pain Mama!!
Anywho- back to my dad. For dinner, he did his two favorite outdoor activities. He grilled up some yummy ribs and fish...
And played Golf with his two favorite boys.

Inside, we had some special visitors. My Auntie Irene and Uncle Mike! I Love them. They are so much fun!

Flavor Karate Chop to the Buds

...Taste Buds that is....

If you think I have forgotten about the Project Wifey Wife: Readers' Edition, you are wrong. I have sorted through them and have every intention to cook every single one of them. From Risotto to Cake pops, I WILL make it, bake it, own it, and eat it.

Here is one I tried last week and boy oh boy is it packed with flavah!

Project Wifey Wife: Week 13-The Savory
Marissa's Honey Soy Grilled Salmon with Edamame
adapted from the Food Network Kitchens

Marissa is Hubby's Cousin who just recently celebrated her 21st birthday!


















Oh, to be young again. How I miss the days of partying until the wee hours of the morning, drinking, dancing, and being footloose and fancy free....::le sigh::

Anywho- enough of my late 20-something  mid life crisis.

Ingredients
1/4 cup packed cilantro leaves
2 scallions
**instead of 2 tsp vegetable oil**
1 tsp vegetable oil / 1 tsp of sesame oil ( I love the taste!)
salt and pepper to taste
4 center cut skin on wild salmon fillets
2 tsp fresh lime juice
2 tsp low-sodium soy sauce
2 tsp honey
1/4 tsp black sesame seeds
1 1/3 cups cooked edamame

1. Pre-heat the Broiler. (I used the Broil Method, but you can also grill it. )

2. Finely chop the cilantro and scallion and mix in the oils and ginger. Season with salt and pepper.

















Look! I got to use my mini-whisk. Love this little guy!






















3. Cut two 3-inch long slits through the skin lengthwise on the bottom of the salmon fillets, going about halfway into the salmon. Stuff 'em up!

















4. Stir together the lime juice, soy, and honey until smoooooooth operator.

















5. Place fillets on a greased pan and set it on fire put it under the broiler skin down, basting 3 or 4 times with sauce. Cook for 6 to 7 minutes.

















Don't ask me why the pan is bending this way.... and Don't ask me if I almost burned dinner.

and please Don't ask Hubs how many times he had to calm the Fire Alarm down.

6. Finish with a sprinkling of the black sesame seeds, rice, and edamame.


















Can't even tell that it almost went up in flames.

















The flavor kick is Insane in the Membrane!

Simple Salmon

Baked Salmon Deliciousness.
