Weekend Recap: I'm A Lucky You Know What

This weekend was full of good things... literally... good things.

Friday was Christmas Bunco. This is in fact, one of the best days of the year. I get to spend quality time chit chatting it up with 11 of my favorite girls. I truly love them so much. They don't know how happy they make my heart. (Many of them are camera shy so I spared them the embarrassment of plastering their beautiful faces on my blog.)
One of my students asked me what I was doing that night and after I told him I was going to have dinner with my friends, he proceeded to add that we will probably be talking about male ice skaters, "you know, because they have tight pants?" His words, not mine.
Sadly, we did not have time to talk about male ice skaters because we were too busy eating, laughing, and laughing some more.
p.s Brie plus cranberries equals heaven. It's simple math.

And we ate some more.

But, the highlight of my night was getting to rummage through my friend's NEW KITCHEN! Holy Moly! I died and gone to kitchen heaven.

Check out these sexy drawers. You can move those pegs around accordingly.
I really want to make food babies with this spice rack. Ohh my!
I love drawer. I love kitchen. I love friends.

Oh, and I'm loving this, too.
Hubby gave me an early Christmas present because my old phone decided to be a freakface and give me hard time. Even though it was being difficult, I feel bad for moving on to something bigger and better. I'm the type of person who gives feelings to inanimate objects. I am sorry Palm Pixi.

But, I have to admit, I have super obsessed with this thing and I am even more excited about the camera on this bad boy. Now I can take good pictures even when I forget my real camera!

Sunshiney Day

Happy Friday! YIPEEEE!

Smiling is my favorite sport. My childhood nickname was Sunshine because I smiled so much. I'm working on bringing back the old me. And when I say old me, I mean the 2 year old me...minus the peeing in my parents' bed and trying to buy gum with buttons. (Both are true stories.)

This week, there were some awesomely awesome changes that made my days Sunshiney.
1. This bowl from TJ MAXX.... not because it was cheap and it's pretty....

but because when the sun shines through the window,  it turns my living room into a disco club every morning. (Sonic goes cray cray )
2. Trying something new. I rarely paint my fingernails. One, because I'm lazy and two, because I'm lazy. But I somehow had enough energy to paint my nails all purdy. I'm glad I did because every time I look down... it makes me giggle. Don't you just love polka dots?
I blame this new obsession on Katwina. There was a sale at Ulta and we agreed that it was too good to pass up. Buy 2 ($5 each) and get 2 FREE! I mean...if that's not a steal, I don't know what is. Free things make me smile! Why is this her fault? Because it sure wasn't mine.

3. Baby Bumps EVERYWHERE! I'm at that age where everyone around me is getting preggos. That makes me smile. I'm having slight  strong baby fever so I'm trying to remedy it by living vicariously through them. ( I know I'm not truly ready for one myself) I'm one of those weirdos that rub their bellies every time they walk by me. ( I always make sure to ask first) OOoooo wook at the widdle bewwy!

My Bunco pal Jilly is preggos...yesterday was her BABY BUNCO!

Her baby boy got SOOOOO excited that he decided to come out a month early. Her water broke the day before her baby shower. Don't you love unexpected surprises!? How can that not make you smile?

Welcome to the world Wesley Joshua!! Remember me? I was the one who rubbed your mommy's belly ALL THE TIME! You're going to be so loved, Baby!

Because Jilly couldn't make it to her own baby shower, we Video chatted ourselves opening her gifts so she can watch them while she was waiting for her baby to come! Technology is a beautiful thing!

Now, I'm off to go to Vegas until Wednesday! I have a Teacher Conference to attend (yes, in Vegas). Pictures and yummy dinners Vegas style to come!

Thursday
It was BUNCO night with my Ladies and I made out like a Food Bandit!
My lovely friend Sue brought me some Vanilla Sugar. Oh, the things I can do with this! Vanilla cupcakes, Vanilla scones, Vanilla Ice Cream, Vanilla butter, Vanilla cream, Vanilla shrimp....ok that's enough Bubba.






















I'm a Vanilla FREAK! If I go for Ice Cream, 9 out of 10 times I will choose just plain ol' Vanilla. Never let's me down.

I also got some Amish Friendship Bread. I'm boggled in my brain because I've never heard of such a thing. There are so many directions that my ADD is preventing me from paying attention. I hope I don't screw this up!




























The Amish....what will they think of next? 

Friday
One of my teacherly duties this year was to chaperon Prom.
Dollin' myself up? Bringing my Husband for a hot date? Free dessert and Music? Sure, why not.

Before the prom festivities, the other chaperons and I went out to dinner.
*Remember how I told you I spend way too long reading menus...here's proof that I'm horrible with decisions. Here's one of the other teachers telling me to HURRY THE HELL UP.
I can see annoyance in his eyes.

It was a tough choice between the Scampi or the Salmon

















After 3 rounds of "Can you give us another minute" I finally decided on the Scampi.
Then we rushed on out to take some pictures. Here are some of my teacher friends....
yes, we are the cool teachers. :)

I swear my dress wasn't that short!

















Then we arrived at the beautiful Midnight Masquerade.















T and I had coat check duty. Most Boring job in the world. Never sign up for that.















Luckily our hubbies were there to keep us entertained.

You didn't think we'd leave without taking one of these, did you?

















We also had the "pleasure" of watching our youth grind and gyrate on each other. It's safe to say the kids were pretty much trying to make babies through their pants. I was able to stop a couple of kids from eating each other's faces, but really, I didn't want to get in the middle of these hormonally challenged individuals. Plus I didn't want to get any STDs.














The Weekend
One word....STEAK. I don't know what the HECK my body was doing to me, but all I wanted...all I NEEDED was a big fatty piece of steak. Maybe my body was craving Iron? Or whatever else kind of things are in steak?

I feel a bit cruel about taking this picture.

Readers Project Wifey Wife Week #14-The Savory
Christine's Potato Risotto

Ingredients
1 Tbs butter
1 cup finely chopped onion
1 lb Yukon Gold potatoes, peeled, cut into 1/8 in. cubes
1/8 tsp cayenne pepper
Coarse kosher salt (I just used regular salt)
1 1/2 cups low salt- chicken broth
1/2 cup heavy whipping cream
1/4 finely grated Parmesan cheese
1/4 cup finely chopped chives
















1. Melt butter in a heavy large saucepan over medium heat. Add onion; cover and cook until soft, stirring occasionally (about 7 minutes)















2. Add potato cubes and cayenne pepper; sprinkle with salt and pepper. Add chicken broth; bring to a boil. Add more chicken broth a tablespoon at a time if it gets too dry. Reduce to medium heat.

3. Add cream and simmer until potatoes are tender but still hold their shape, stirring often (about 10 minutes.















4. Stir in cheese and chives. This is good, people...real good.















Why is cheese so good? It's a gift from God. I'm pretty sure of it!















So here's my little WAH-PAW ::kung fu style:: of flavor. The fat that was leftover from the frying of the steak...umm...yeah I put it...alll...up...in....dere.

 Fat...it's what's for dinner.















Best potatoes on this side of the Mississippi. Forkful of buttery goodness. I wish I could tell you that they were fat free, but then I'd be lying...and I, my friend, wouldn't do that to you.

Crockpot o' Gold

When I was a first grade teacher, I would come in early on St. Patty's Day to make a special surprise for my little cuties.

I would spill crayon cups from the writing center, make the numbers on the calendar all Topsy- turvy, strategically tip over random desks, hide chocolate gold coins in their pencil boxes, and make a green and gold glittery trail of "Leprechaun Dust." I made them "help" clean up, but I just watched mostly.

He is a little trouble maker after all....






















This picture is funny. But if he were found in a First Grade classroom, he'd be considered a very very bad man.

This year, I don't have that chance to make little kids think that a tiny green monster wrecked the classroom. So, I celebrated early.

Celebration Numero UNO at BUNCO!!!!!

















There were tables of green, decorated with beaded necklaces, clover this and that, and snacks....glorious and delicious snacks!

Oh the SNACKS!!

And you can't have Bunco without DRANKS!

Corned Beef, cabbage, carrots, and po-tats, and Irish Soda Bread...Hell YEA!

















So tonight, I celebrated St. Patty's day with my Hubs. I made Crystal's Corned beef.... wowee!

Project Wifey Wife-Week 12: The Savory
Crockpot Guinness Corned Beef

Ingredients:
4lbs Corned Beef Brisket
4 cups brown sugar
Packet of seasoning (It comes with the beef! YAY!)
2 cans of Guinness Beer














1. Start with a rub down. Rub the beef with the brown sugar and seasonings.

2. Drench that bad boy with TWO cans of Guinness....

**Careful not to accidentally on purpose pour some in your mouth. **















3. Cook on LOW in your crock-pot/ magic meat maker for 8-10 hours. You can add the veggies during the last two hours of cook time.















4. And at the end of the Rainbow...there is always a Crock Pot of Beef...
















Or something like that....
